Losada Manzanilla Olives, named “little apple” for their round, spherical shape, are one of the most renowned olive varieties in the world. Typical of Seville in Andalusia, Spain, Manzanilla olives are prized for their delicate flavor, bright and homogeneous color, and high oil content that provides a smooth, pleasant mouthfeel. With a small stone that allows the flesh to slide off easily, these olives offer a perfect balance between pulp and pit, with a tender texture and skin that is barely perceptible. Naturally brined within 24 hours of harvest, Losada olives undergo a slow 9–12 month curing process in sea salt and water, with small amounts of lactic, ascorbic, and citric acids—preserving their authentic character. This artisanal approach contrasts with the faster 3-month lye curing used in mass production, resulting in a richer, more complex flavor profile. For over 50 years, Aceitunas Losada, a family-owned producer in Carmona near Seville, has overseen the entire process from hand-harvesting their own groves to curing and, since 2014, on-site packaging. Under the leadership of siblings Luis and Maria Losada, the company has embraced natural methods and revived forgotten olive varieties, blending tradition with innovation.
