The marron glacés of the "Selezione Agrimontana" line boast a size of 50-60 fruits per kg (medium size). Origin: mainly from central Italy (Tuscan-Emilian Apennines, provinces of Florence and Bologna). Agrimontana marrons are processed fresh, without the use of sulphur dioxide. Agrimontana's master pastry chefs call this process "curatura", a name that well defines the skill and affection with which the various operations are carried out. After the "novena" (the phase in which the product is placed in water, recycled daily with their skin, in order to ripen the best aromatic notes), the steam peeling is carried out, finished by hand to ensure that the marrons remain perfectly intact. The final step is hot candying, without forcing, in full respect of the organoleptic characteristics of the precious chestnut fruit, which is embellished with a veil of cane sugar and Bourbon vanilla berries.
